While waiting for the strawberries in my side yard to ripen, I could not wait to taste strawberries again. So, when they were on sale at the Sprouts grocery store, I purchased some. They were “kind of” red and the flavor was not spectacular. So I decided to make them into fruit leather but thought i’d experiment with making the leather “fancy.” 

First, I pureéd the fruit in the food processor and added a tiny bit of sugar to help the flavor. Then, added my secret for nice fruit leather: pectin. The addition of pectin helps the dried fruit stay flexible and not brittle. I used freezer pectin which calls for letting the mixture sit for 30 minutes to thicken. Then, just before going into the dehydrator, I pureéd some blueberries and drizzled designs in the strawberry pureé for a “fancy” fruit leather.
